The 4 delicious recipes using avocado

Avocado has become an incredibly popular food among health-conscious individuals. These days, avocado is often referred to as a superfood. Therefore it is not a surprise that Avocado is one of my best friends during my diet. I want to share with you about my favourite food to inspire you to add more avocado to your day and to aid you in your journey to a healthier life.

Avocados are naturally full of nutrition, which means it is gluten-free, dairy-free, vegan and vegetarian, therefore it is suitable for everyone to enjoy. So, how can avocado be so helpful during your diet? Avocado is fibre-rich, there are around 10 grams of fibre in one medium-sized avocado. It contains both insoluble and soluble fibre. Insoluble fibre, which speeds up the passage of foods. Insoluble fibre accounts for 75%, with the remaining 25% as soluble fibre. Soluble fibre is the fibre that can make you feel full. Avocados are also one of the only fruits that contain heart-healthy monounsaturated fat (the good-for-you fat) that is believed to be responsible for some health benefits.

All of these avocado recipes is to die for and I cook it at least once a week!! Most of the recipes literally take under 15 mins to throw together and it always satisfies my hungry tummy! So let’s get started 🙂

1. Tomato Avocado Melt

Prep time: 4 mins    Cook time: 3-4 mins

Servings: 2 people

Ingredients

  • 4 slices bread
  • 1-2 slices of butter
  • salt and black pepper, to taste
  • 1 small Roma tomato, sliced thin
  • 1/2 avocado, sliced thin
  • 4 slices cheese (your favorite kind)
  • 6 slices ham

Instructions

  1. Turn on the oven at 180, while preparing the ingredients.
  2. Spread a thin layer of butter on each piece of bread.
  3. Layer bread with ham, avocado slice and tomato and top with cheese.
  4. Sprinkle with a pinch of salt and black pepper to add flavor.
  5. Put it into the oven for around 3-4 mins until bread is toasted and cheese is bubbly

 

2. Avocado smoothie

Prep time: 2 mins    Cook time: 1 min

Servings: 1 people

Ingredients

  • 1/2 avocado, sliced thin
  • 1 cup mango, frozen
  • 1 cup soya milk
  • 1 tbsp honey
  • 1 cup greek yogurt

Instructions

  1. Put everything into the blender, starting with all the solid ingredient at the bottom then the liquid ingredients.
  2. Blend, Blend, Blend!! You’re all done.

 

3.Creamy Avocado Spaghetti

Prep time: 7 mins    Cook time: 12 mins

Servings: 2 people

Ingredients

  • 2 avocado
  • 5 oz spaghetti
  • 1 slice bacon
  • 1 clove garlic
  • ¼ freshly squeezed lemon juice
  • Pasta water
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions.
  2. Cut the avocados in half, remove the pits and cut it in pieces.
  3. Add the rest of the ingredients to your blender and blend until it turns into a smooth sauce.
  4. Start with a 1-2 cup of pasta water and add more as needed to get the consistency you want.
  5. Cut the bacon into small pieces, then fried it until golden.
  6. Toss the pasta with the sauce in a bowl then add salt and pepper, and mix well with the spaghetti and the avocado source. You can also add a sparkle of parmesan cheese on top.

 

4.Guacamole stuffed chicken breastsProcessed with VSCO with a9 preset

Prep time: 15 mins    Cook time: 15 mins

Servings: 2 people

Ingredients

  • 2 small boneless chicken breasts 
  • 1 avocado
  • ¼ cup chopped tomato
  • 1 tsp fresh lime juice
  • ¾ tsp salt and pepper to taste
  • Garlic powder to taste
  • Mixed herbs to taste
  • side vegetable (broccoli and sweetcorn)

Instructions

  1. Preheat oven to 400 degrees F.
  2. Lay out the chicken breast and season with salt, pepper, garlic powder and mixed herbs. Set aside.
  3. Remove the peel and seed from the avocado. Place the avocado in a bowl and mash with a fork. Add tomato, red onion, lime juice, and ½ teaspoon salt. Stir to combine.
  4. Divide the guacamole between the chicken pieces and spread it into a thin layer.
  5. Roll up the chicken. Secure the seam with toothpicks.
  6. Place the chicken seam-side down in a baking dish that has been sprayed with cooking oil.
  7. Bake for around 15-20 minutes, or until the chicken is cooked through.
